An exciting new partnership with Michelin Star chef Stefano del Rosso is set to create a sensory experience based on his own culinary philosophy: “Globally inspired and locally created,” a process that begins with premium ingredients, sourcing the best of what is available locally and seasonally, and focusing on quality and flavour.

Stefano del Rosso is set to create a sensory experience as he presents his own version of modern Italian cuisine, which is creative yet elegant with exquisitely balanced flavours at the Bastide du Cours and at the exclusive gastronomic restaurant on the first floor: L’Atelier by Stefano del Rosso.

Chef Del Rosso developed his passion for cooking at an early age, intertwined with the flavours and colours of his hometown and birthplace. He learned the tastes of fresh produce from his mother, which inspired him to prioritise the freshness of ingredients and develop a high-quality, elaborate cooking philosophy.

With his subsequent experiences working with great masters including Joël Robuchon  Chef Stefano Del Rosso acquired a reputation for collecting and advancing the rich traditions of southern Italian cuisine. He believes that a simple kitchen may never be exaggerated but is always looking for a blunt and clean taste.

Del Rosso who has won several awards in international and Mediterranean cuisine; having collaborated with Michelin star restaurants for 9 years, he perfected his culinary skills and eventually won his own star.

By 2010 he was highly recognised as an ultimate master in Italian cuisine and became private chef to many VIP clients including Johnny Depp.

He has now set his sights on seducing the region and the aixoise clientele with the new italian restaurant at the Bastide by Stefano del Rosso and his second gastronomic restaurant on the first floor; L’Atelier by Stefano del Rosso. So if you are looking for a gastronomic experience that will blow your mind, look no further.

Sample some of his devine dishes, raviolis maison, his Tuscan beef a la mozza della puglia, his incredible parmesan aged for 28 months, his red tuna à la poutargue or the gambas à la tomate with l’oeil au takaki and of course the antipasti « Aperitivo à l’Italienne »!

In a little corner of the L’Atelier on the first floor is l’Espace Epicerie where one can buy products and specialities specially chosen by Del Rosso from his ubiquitous olive oil delicacy of La Muraglia, to Motoscato wine that is even served at the Vatican!

Look out for his fabulous Sunday ‘Brunch’ which launches in October; champagne and caviar options always a wonderful way to spend Sunday morning!

As a pivotal hub of Aix en Provence, notably the Cours Mirabeau has many famous institutions but the one not to miss whether it be for dinner or for a weekend getaway is La Bastide du Cours. This charming hotel is located in a building that dates back to 1807 and has stunning historical foundations from a former nunnery. The property features a stunning large open fronted terrace and a cosy conservatory. The 11 bedrooms each offer style and luxury with even Jacuzzi’s as an option.
